Gluten-free lines the pie tin

To help those with celiac disease or wheat sensitivities still enjoy a good pie, Achatz Homemade Pie Co., Chesterfield, MI, developed a wheat-free crust. As diagnosis and awareness grows, consumers are asking for gluten- and wheat-free products, and pie is not exempt.
“People are cutting wheat from their diets completely but still want to enjoy a sweet treat once in a while,” said Wendy Achatz, co-owner of Achatz Homemade Pie Co. with her husband, Dave. “Our wheat-free crust is almost as good as our traditional style, and we are tweaking it to achieve the right flakiness.”
