The American National Standards Institute (ANSI) offers standards for equipment manufacturers, and the American Society of Baking (ASB) oversees the ANSI Z50 standards for safety and sanitation. Z50.1 offers standards related to safety of bakery equipment. Z50.2, which is currently being rewritten, covers sanitation standards.
The safety standards were most recently revised in 2006, and can be found on the ASB website, www.asbe.org
