Automating pretzel roll production

Gemini Bakery Equipment Co., Philadelphia, PA, has developed an inline automated pretzel lye application for producing the increasingly popular pretzel roll, according to Ken Johnson, the company’s president. The line can handle either rounded or moulded products, and its inline design allows a bakery to proof the pretzel rolls on peel boards.

The line will automatically strip the rolls off the board, cover them in a lye bath solution and either load the rolls back into pans or deposit them directly onto the oven hearth. “The new system provides minimal product handling, greater throughput rates and maximum product uniformity,” Mr. Johnson added.
