COLUMBUS, WIS. — Lyco Manufacturing has opened a laboratory to assist its customers with product recipe development and machinery trials. Commercial food processors now will have access to technology in continuous-process cooking and cooling equipment, such as Lyco’s Clean-Flow blancher/cooker.
The facility is designed for testing continuous-process blanching, cooking, pasteurizing and cooling processes. The lab may test products with hot water or direct steam, and cool with chilled water to 33 degrees Fahrenheit. The lab is designed to test with full-size production machines up to 72 inches, or simulators.
