Penford launches potato-based resistant starch

CENTENNIAL, COLO. — Penford Food Ingredients has introduced PenFibe RS, a potato-based resistant starch that is about 85% dietary fiber on a dry solids basis. It has a bland flavor and color, according to Centennial-based Penford Food Ingredients, and thus it is suitable for a range of applications, including baked foods, gluten-free products, breakfast cereal, nutrition bars, vegetable sauces, pasta, yogurt and pet foods.
PenFibe RS has a low water-holding capacity that allows for increased solids/bulk without affecting food quality. It contributes minimal viscosity to food systems.
