Ultra-Tex 8, a new tapioca-based starch, has high viscosity and a smooth, short and glossy texture, according to National Starch Food Innovation, Bridgewater, N.J. The melt-away characteristics make the starch a good choice for puddings, sauces, pastry fillings, and frozen or baked foods, according to the company.
Ultra-Tex 8 offers a bland flavor profile, provides a rich creamy mouthfeel and maintains textural stability in cold storage, according to National Starch.
