RIDGWAY, COLO. — Shelley, Case, a registered dietitian and author of “Gluten-Free Diet: A Comprehensive Resource Guide,” has joined the scientific advisory board of the Grain Foods Foundation. Ms. Case, the founder of Case Nutrition Consulting, Inc., is a member of the medical advisory boards of the Celiac Disease Foundation and Gluten Intolerance Group in the United States. She participated in a Grain Foods Foundation’s nutrition panel at the International Baking Industry Exposition in October in Las Vegas. “It’s important consumers understand that the gluten-free diet is a specific medical treatment for celiac disease and that jumping on the gluten-free bandwagon for a weight loss diet does not make sense,” Ms. Case said.
