Flour Mix

Flour Mix. A commercially formulated mix in which all dry ingredients required by specific formulas (q.v.) are blended together at the supplier's plant, including flour (q.v.), sweeteners (q.v.), dairy products (q.v.), dried eggs (q.v.), shortening (q.v.) and, in some instances, yeast (q.v.), so that only the addition of the proper amount of liquid and mixing are needed to produce a finished dough. Mixes of this type are widely used for the production of cake doughnuts (q.v.) and of a broad range of yeast-leavened (q.v.) and chemically-leavened (q.v.) bread (q.v.) and cake (q.v.) products.
