The Fritsch Euroline can produce a variety of pastries, including elephant ears, turnovers with top seal, punched semi-circular baked foods, pointed baguettes and Chelsea buns produced by a scissor pattern-cutting device. Its pneumatic drive system has been replaced with an electrical one, resulting in significantly reduced noise levels and up to 80 punching and 150 cutting strokes per minute result. A variety of special attachments allow the baker to produce different types of pastries. To provide product uniformity and avoid compression or stretching, Euroline’s guillotine cut-off attachment moves along synchronously with the dough sheet.
