NEW YORK – Jennifer Esposito, an actress who formerly appeared on the CBS TV show “Blue Bloods,” has opened a gluten-free bakery in New York, according to an April 12 blog entry on the Mother Nature Network’s web site. “Jennifer’s Way” is located in Manhattan’s East Village. According to the bakery’s web site at jennifersway.org, Ms. Esposito was diagnosed with celiac disease four years ago. Her bakery offers such items as breads, cupcakes, cookies and pastry. All of the items are not only free of gluten but also free of dairy, soy, peanuts and refined sugar. Celiac disease is an autoimmune disorder triggered by consuming gluten, a protein found in wheat, barley and rye, according to the National Foundation for Celiac Awareness, Ambler, Pa.
