LAS VEGAS — A full Grain Foods Foundation agenda related to timely issues for the grain-based foods industry was discussed at the International Baking Industry Exposition by Christine Cochran, the group’s executive director.

In a videotaped interview with Milling & Baking News editor Josh Sosland, Ms. Cochran discussed steps the G.F.F. is taking in response to the recent publication of “Grain Brain” by David Perlmutter and how the organization is preparing for the upcoming publication of the 2015 edition of the “Dietary Guidelines for Americans.” The interview was conducted at the Las Vegas Convention Center, the site of Baking Expo.

In addition to “Grain Brain” and the 2015 D.G.A.C., the foundation continues to highlight the body of evidence supporting the healthfulness of grain-based foods. In this regard she cited the pending publication by Scientific Advisory Committee chairman Glenn Gaesser of a new scientific literature review.

Impressed by the show of technology at the I.B.I.E., Ms. Cochran noted the G.F.F.’s investor base perfectly mirrors the Baking Expo constituency.

“The G.F.F. is the only organization that brings together the bakers, the millers and the equipment manufacturers and other allied trade companies to support the entire category. We work diligently to promote the nutritional benefits of all grain products.”

Just over a year after joining the foundation, Ms. Cochran said she is optimistic about the industry’s future.

“The outlook for the grain-based foods industry is a positive one,” she said. “We have to be thoughtful about what we are doing and where our consumers are, and we have to provide them with the products that they need, but I also think we have those products and we have the capability.”
