Bakerpedia’ answers questions on ingredients, processes

CHICAGO – The newly formed Bakerpedia exhibited at the American Society of Baking’s BakingTech 2013 going on in Chicago through Tuesday. Bakerpedia, based in Zanesville, Ohio, serves as a resource for those in the baking industry who have ingredient and process questions. A web site may be found at www.bakerpedia.com.

Lin Carson founded Bakerpedia and serves as chief executive officer. She previously worked as research and development manager at Wendy’s New Bakery Co. in Zanesville. Dr. Carson has a Ph.D. from the Department of Grain Science at Kansas State University. 

Consultants for Bakerpedia include Theresa Cogswell for commercial bakery, Lauren Swann for regulatory compliance, Richard Charpentier for product development, Tim Bohrer for packaging, David Hahn for research and development, and Steffen Weck for start-up and commercialization.
