New cocoa powder has British flavor influence

ROLLE, SWITZERLAND — Archer Daniels Midland Co. will introduce D11LA, a fat-reduced cocoa powder inspired by traditional British chocolate flavor, during Gulfood Manufacturing 2014 in Dubai, United Arab Emeritus, from Nov. 9-11.

British chocolate traditionally is made with crumb, a compound ingredient comprised of sugar, milk and cocoa mass. ADM’s new cocoa powder combines with caramelized milk to provide rich and creamy British milk chocolate taste, according to the company. The D11LA cocoa powder will join the deZaan range of cocoa powders.

“D11LA allows signature British flavor to be captured in compound coating formulations, including chocolate bars, biscuits, wafers, baked goods and more,” said Krista Evers, product service and development manager. “It provides users with the ultimate milk chocolate taste and versatility in a broad range of applications due to its appealing light brown color.”
