LAS VEGAS — The Grain Foods Foundation will host a panel Sept. 27 at the International Baking Industry Exposition in Las Vegas. The session, covering issues ranging from gluten-free dieting to minority nutrition, will be held at 11 a.m. in North Hall Room N260 at the Las Vegas Convention Center.

Speakers currently confirmed to participate in the panel are Shelley Case, Glenn Gaesser and Sylvia Melendez-Klinger.


Ms. Case is a registered dietitian and leading international nutrition expert on celiac disease and the gluten-free diet. She is a member of the medical advisory boards of the Celiac Disease Foundation and Gluten Intolerance Group in the United States and the professional advisory board of the Canadian Celiac Association.

Dr. Gaesser is a professor at Arizona State University. He is associated with the school’s College of Nursing and Health Innovation where he serves as director of the Exercise and Wellness Program and the Healthy Lifestyles Research Center.

Ms. Melendez-Klinger, a registered dietician, is founder of Hispanic Food Communications. She and Dr. Gaesser are members of the G.F.F. Scientific Advisory Board.

Ms. Case will discuss issues surrounding the increasingly popular gluten-free diets, while Dr. Gaesser will discuss the importance of carbohydrates in weight control.

Ms. Melendez-Klinger will focus on minority nutrition issues as well as the importance of enriched grains in the diet.
