MANHATTAN, KAS. — Five experts in the field of nutrition and baking will present free educational seminars as part of the National Festival of Breads, scheduled for June 25 at the Airport Hilton Inn in Wichita, Kas.

Kicking off the seminars at 9 a.m. on June 25 will be Jane Frye, who was named the 2011 N.F.O.B. Bread Sculpting Winner for her “Sunflower and Wheat Bread Sculpture.” Ms. Frye will demonstrate how she created the sculpture, plus offer tips on how to use bread.

At 10 a.m., Paula Gray of King Arthur Flour, Inc. will give a presentation on basic sweet bread dough. The demonstration will cover the basics of yeasted sweet dough, including learning how each ingredient works, exploring how different types of flour may change the taste and texture of a recipe, and learning bread kneading, shaping and baking technique tips.

Sharon Davis of the Home Baking Association will explore variety bread in two different sessions at 11 a.m. and 2 p.m. The presentations will include Ms. Davis’ top 10 bakers’ basics for variety bread baking.

At 1 p.m., Aaron Clanton of AIB International will discuss baking with whole grains. The session will explore what whole grains are and why they should be incorporated into bakery products. Participants will learn the flavor and textures that whole grains may add to foods as well as the nutritional benefits.

The final free seminar will by presented at 3 p.m. by Joyce Esfeld of Fleischmann’s Yeast. Ms. Esfeld will talk about making no-knead bread.

The baking sessions are one component of the all-day N.F.O.B. competition, which is sponsored by the Kansas Wheat Commission, King Arthur Flour and Fleischmann’s Yeast.
