The new micro-doughLAB is a small-scale (4-gram) dough mixer and analysis system that determines the quality and processing characteristics of flour and dough, according to Perten Instruments, Springfield, Ill.
The small sample size may be ideal for researchers, wheat breeders, grain handlers, millers and bakers with limited and/or high valuable samples.
