Confectionery system an alternative to acacia gum

WHITE MARSH, MD. — TIC Gums has introduced TicaPan Quick Crunch, a system for sugar and polyol (sugar alcohol) syrups used in confectionery coating and hard panning.

“In addition to cost and production time savings, TicaPan QuickCrunch is an advantageous alternative go gum Arabic (acacia gum) because it provides harder and crunchier shells,” said Maureen L. Akins, applications manager and TicaPan project manager for White Marsh-based TIC Gums.

She added TicaPan Quick Crunch offers ease of hydration, ease of processing and ease to pan a smooth finish.
