WASHINGTON — The total amount of edible liquid product from shell eggs broken in August was 232,110,000 lbs, up 3% from July 2011 and from August 2010, the U.S. Department of Agriculture said in its latest Egg Products report.

August production of edible liquid whole eggs was 146,177,000 lbs, up 8% from July and up slightly from August 2010; liquid whites were 57,065,000 lbs, down 5% from July but up 7% from August 2010; liquid yolks were 28,868,000 lbs, down 4% from July but up 12% from August 2010; and inedible production was 19,881,000 lbs, up 2% from July 2011 and from August 2010.

Shell eggs broken in August were 181,710,000 dozen, up 1% from July and up 3% from the previous year.
January – August production of edible whole eggs was 1,092,827,000 lbs, down 2% from the same period of the previous year; whites were 468,297,000 lbs, up 7%; yolks were 239,004,000 lbs, up 11%; inedible production was 154,147,000 lbs, up 1%; and total edible liquid was 1,800,128,000 lbs, up 2%.
