Amflow Process. A system of continuous doughmaking, developed by AMF, Inc., in which the major equipment components consist of liquid ferment (q .v.) tanks, tanks for liquid shortening (q.v.) and oxidant solutions (q.v.), an ingredient premixer with an accompanying flour feeder, a continuous dough developer, and a divider-panner, with all units interconnected and synchronized to produce a fully-developed, panned dough without batch (q.v.) processing.
