Amylolytic Enzyme. A hydrolytic enzyme (q.v.) that brings about the degradation of complex carbohydrates (q.v.), such as starches (q.v.), polydextrins (q.v.) and polysaccharides (q.v.), into simpler, soluble carbohydrates, such as mono- and disaccharides (q.v.) or sugars (q.v.). It is synonymous with amylase (q.v.)
