Arm

Arm. The extended parts of the cradles that are mounted as pairs at opposite ends of the axle within the mixer bowl (q.v.) of a horizontal dough mixer (q.v.). Each pair supports a mixing bar (q.v.) across the bowl width which performs the actual kneading and rolling of the dough (q.v.). Depending on their design, the cradles may have two, three or four arms, with each pair supporting a mixing bar.
