Azodicarbonamide (ADA)

Azodicarbonamide (ADA). An oxidizing agent (q.v.) (H2HCON:NCONH2) that functions as a flour improving agent at a maximum permitted use level of 45 ppm. Its effective action occurs during the dough mixing and proofing stages. It may also be used as an optional dough oxidant to promote more rapid dough development.
