Bagel. A yeast-fermented, generally firm-textured, chewy roll (q.v.) in the shape of a doughnut (q.v.), produced from a relatively lean dough (q.v.). Its glazed surface is obtained by placing the shaped, raw dough product into a boiling water bath for variable periods before baking it to a golden-brown crust (q.v.) color.
