Bake-Off. (a) A term generally applied by bakers to the process of transforming raw dough (q.v.) into an edible product by the application of heat. (b) In a more limited sense, the term designates the operation of in-store bakeries (q.v.) in which fully-formed dough products, generally in a frozen state and obtained from a central production facility, are thawed, proofed (q.v.) when required, and baked on the premises for immediate sale to the consumer.
