Baker's Yeast. Selected strains of Saccharomycetes cerevisiae (q.v.), isolated as single cells from pure cultures and grown on a special substrate (q.v.) of beet and cane sugar molasses (q.v.) under highly aerobic (q.v.) conditions. It is available in various forms, including compressed yeast (q.v.) with a moisture content (q.v.) range of 68-71%, active dry yeast (q.v.) and instant active dry yeast (q.v.) with moisture contents ranging from 4 to 8%, and liquid cream yeast (q.v.) with a moisture content of 80-84%.
