Barbari Bread. An oval, yeast-leavened flat bread (q.v.) that is popular in some Middle East countries. The dough (q.v.), fermented for 2 to 3 hours, is shaped into a flat, oval loaf, whose top surface is given five to six longitudinal slits to form corresponding grooves in the baked loaf. Baking is for 8-12 minutes at 430¦F (220¦C).
