Biological Value. A numerical value assigned to specific proteins (q.v.) or protein categories to designate their nutritional status based on their essential amino acid (q.v.) content. Thus, the biological values of 94, 85, and 67 of the proteins of whole egg (q.v.), milk (q.v.), and wheat (q.v.), respectively, reflect their relative contents of essential amino acids and point to their respective nutritive variance.
