Biplex Dough Mixer
Biplex Dough Mixer. A mixer (q.v.) with a fixed horizontal bowl in which the dough (q.v.) is subjected to a two-stage mixing action, the first at low speed to promote ingredient blending and flour hydration (q.v.), and the second at high speed to bring about full dough development (q.v.), thereby eliminating bulk fermentation (q.v.). Total mixing time to full dough development is about 5 minutes.
