Blending. (a) A stage in the milling process (q.v.) at which two or more wheats (q.v.) or flour streams (q.v.) are combined to produce a single flour (q.v.) with the desired baking properties. (b) The act of intermingling or dispersing different substances or ingredients into a homogeneous mixture, either in a prescribed sequence or in random fashion, as a preparatory step to mixing a batter (q.v.) or dough (q.v.).
