Blister

Blister. A hollow vesicle formed by the separation of small areas of crust (q.v.) from the crumb (q.v.) of the baked product. There are several causes for its formation, including abuse of dough (q.v.) during moulding (q.v.), excessive humidity (q.v.) or chilling during final proof (q.v.), or improper frying (q.v.) or baking (q.v.) conditions.
