Bread Mold

Bread Mold. Certain species of fungi (q.v.) that are occasionally encountered as microbial infections in bread products in which they produce various discolorations that range from green to gray to black, and give rise to musty odors and off-tastes. They are, as a rule, nonpathogenic and cause no injurious effects when products infected with them are inadvertently ingested.
