Bread Softener. Any legally approved dough conditioner (q.v.) and crumb staling (q.v.) inhibitor that acts either to impart greater crumb (q.v.) softness or to extend it in baked products. Examples include surfactants (q.v.) such as mono- and diglycerides (q.v.), DATA esters (q.v.), and propylene glycol monostearate (q.v.).
