Bread Twisting

Bread Twisting. A process that combines two half-weight moulded dough strings or cylinders into a single loaf by a twisting motion, either manually or by a moulder (q.v.) equipped with an appropriate twisting mechanism, for the purposes of improving the baked loaf's interior crumb (q.v.) characteristics and altering its crust (q.v.) appearance.
