Burner. The heating element of the oven (q.v.), generally in the form of ribbon gas burners (q.v.), located either within the baking chamber (q.v.) in direct-fired ovens (q.v.), or in separate combustion chambers in indirect-fired ovens (q.v.). In the latter case, the heat is conveyed to the baking chamber by means of radiator tubes or flues (q.v.).
