Butter

Butter. The plastic fat (q.v.) that is obtained from milk by churning either its sweet or sour cream. Commercial butter contains about 85% fat (see Butterfat), 12% water, 2% salt, and 1% curd (q.v.). It is valued as a shortening (q.v.) primarily for its flavor as this enjoys a nearly universal appeal among consumers.
