Calcium Iodate (Ca(IO3)2). One of the oxidants (q.v.) that have been approved by the FDA (q.v.) and may be used in bread and roll production at a maximum level of 75 ppm, based on flour. Its action, while relatively rapid, extends into the later stages of dough fermentation (q.v.) as the compound is slow to dissolve.
