Calcium Propionate (Ca(CH3CH2COO)2). A salt of propionic acid (a low-carbon fatty acid (q.v.)), it is an effective mold inhibitor at use levels of 2.5 to 3.5 ounces per l00 pounds of flour and will extend the mold-free shelf life (q.v.) of bread products by several days beyond that normally attained without treatment.
