Calcium Sulfate (CaSO4

Calcium Sulfate (CaSO4). A mineral salt found in nature mainly in an anhydrous (q.v.) form, and as gypsum when in its hydrated form. Its most extensive application is as plaster of Paris. When included as a component in yeast food (q.v.), the sulfate ion exerts a stimulating effect on yeast activity and strengthens the dough's gluten (q.v.) structure.
