Carob Powder. The finely ground product obtained from the beanlike dried pod, also known as locust bean (q.v.) or St. John's bread, a fruit of the Mediterranean evergreen tree, Ceratonia siliqua. It acquires, on roasting, a color and flavor similar to cocoa (q.v.) and is used extensively as a cocoa extender (q.v.) by admixture at rates of 20% to 50% to cocoa powder.
