Carotene

Carotene. Any of three yellow- or orange-colored, fat-soluble pigments found in various plants, especially carrots, and in butter (q.v.). Some are precursors of vitamin A (q.v.) and are converted into that vitamin in the body. The creamy color of unbleached wheat flour is partly attributable to carotene pigments that are present in the endosperm (q.v.) of wheat.
