Cassia. The dried bark of the Chinese tree Cinnamomum cassia , a member of the laurel family, that possesses a flavor very similar to, but more pungent than, that of cinnamon (q.v.) and is, hence, also referred to as China cinnamon. It is used more extensively than true cinnamon as a spice (q.v.) either in the form of a finely-rolled quill or as a powder.
