Cheesecake. A cake with either a firm or light texture (q.v.) made with cream cheese (q.v.) or baker's cheese (q.v), or both, and sometimes topped with a fruit jam (q.v.) or with whipped cream. The light-textured, or French style, cheesecake normally contains varying proportions of meringue (q.v.) made of egg white and hot syrup. The products can be made either with a bottom crust, consisting of cracker meal or cake crumbs, or without such a crust.
