Chiffon Cake. A cake with a light, fluffy texture (q.v.) produced by whipping egg whites (q.v.) and separated yolks (q.v.) into well-aerated foams prior to recombining them with such added ingredients as granulated and powdered sugar (q.v.) and cake flour (q.v.). The cake is normally baked in a round tube pan, as used for angel food cake (q.v.).
