Cholesterol

Cholesterol. A fatty alcohol (C27 H46OH) and an effective emulsifying agent (q.v.) found in egg yolk (q.v.) and in all animal tissues. While physiologically essential, it may create pathological conditions when present at high levels in the blood by forming deposits, as gallstones, and plaques on the inner wall lining of arteries, with the latter condition possibly leading to heart disease.
