Chou Paste

Chou Paste. Also known as cream puff (q.v) paste, it is produced by beating together flour, water, fat, and eggs into a thick paste which, on baking, puffs up to form a shell that can be filled with custard (q.v.) or whipped cream to produce eclairs (q.v.), cream puffs (q.v.), and similar pastry items.
