Cinnamon. The dried, strongly aromatic inner bark of several East Indian laurel trees of the genus Cinnamomum, and in particular of the species C. zeylanicum. The bark is ground into a fine powder, with a reddish-brown or yellow-brown color, and is used as a baking spice (q.v.) to flavor specialty buns, sweet dough products (q.v.), cakes (q.v.), pies (q.v.) and other bakery products.
