Citric Acid (C6H8O7.H2O). Commercially available as a white crystalline powder with a strong acid taste, the acid is found naturally in many fruits, especially oranges, limes and lemons (q.v.). Produced by an appropriate fermentation from sucrose (q.v.) or glucose (q.v.), it is used as an acidulent (q.v.) to impart tartness to cakes (q.v.) and pies (q.v.).
