Coffee Cake. A yeast-leavened product of diverse size, shape and variety made from a dough with relatively high levels of sweeteners and such enriching ingredients as shortening (q.v.), milk (q.v.), and eggs (q.v.). It generally contains fillings (q.v.) of various nut and fruit mixtures, and toppings (q.v.) and icings (q.v.), all of which contribute extra flavor, enhanced tenderness (q.v.), improved texture (q.v.) and extended shelf life (q.v.) to the baked product.
