Cold Dough. A dough that has been mixed, either purposely or accidentally, to an end temperature that is several degrees below the conventional range of 78¦-82¦F (25.5¦-27.8¦C). Generally, such a dough requires either a greater than normal yeast addition or a longer fermentation period (q.v.) to compensate for its reduced fermentative activity.
