Compound Coating

Compound Coating. Chocolate-flavored coating (q.v.) used for enrobing confectioneries (q.v.) and specialty bakery products, prepared from cocoa (q.v.) or chocolate liquor (q.v.), sugar, possibly milk (q.v.), and a special vegetable oil (q.v.). Its use is dictated either by its lower cost in relation to true chocolate or to facilitate production processing.
